What it is
Escolar (Lepidocybium flavobrunneum) is a deep-water fish prized for its extraordinarily rich, buttery flesh — sometimes called «white tuna» or «butter fish» in trade. Cold-smoked at temperatures below 30°C, this fillet retains its silky, almost melt-in-the-mouth texture while gaining a delicate, clean smoke note that complements rather than overwhelms the natural flavour.
