What it is
Vimba (Vimba vimba), known in Lithuanian as Žiobris, is a bony yet flavoursome freshwater fish native to the river systems of the Baltic basin. Firm-fleshed and moderately fatty, it takes cold smoking exceptionally well.
Cold smoking at low temperature preserves the fish’s natural moisture while wrapping it in a gentle smoke aroma. The result is tender, slightly saline flesh with a clean, woodsy fragrance — excellent as a standalone centrepiece or flaked over rye bread.
