What they are

Piparkūkas, literally "pepper cakes", are the gingerbread biscuits that fill Latvian homes every December. Selga has been baking them for generations. They are thin, crisp rounds pressed with a sun-like pattern, a nod to the winter solstice, when the days start to grow longer again. The spice mix is the traditional one: coriander, allspice, black pepper, ginger, cloves and nutmeg. It gives a gentle warmth rather than a sharp ginger bite.

Tip them onto a plate when guests come round, or keep a handful nearby with tea or mulled wine. They are also good crumbled into cheesecake bases, layered into trifles or stirred into rocky road. The 700 g bag lasts through the festive season. Selga's current recipe is made without palm oil.

Ingredients

Wheat flour, sugar, vegetable fats (rapeseed oil, fully hydrogenated rapeseed oil, coconut oil, emulsifiers: mono- and diglycerides of fatty acids, natural flavouring, colour: carotenes), caramel (sugar, water), spices 1.7% (coriander, allspice, black pepper 0.2%, ginger 0.1%, cloves, nutmeg), raising agents (sodium hydrogen carbonate, ammonium hydrogen carbonate), emulsifier (lecithins).

Contains: wheat (gluten). May contain nuts, sesame seeds, egg and milk (manufacturer's statement).

Store in a dry place at 13–23 °C. Once opened, fold the bag tightly or move the biscuits to an airtight tin to keep them crisp.
