What it is
Lubitelskaya is one of the most recognisable names in the cooked-sausage tradition of Eastern Europe. Made from pork and beef with chunks of back fat set throughout the slice, it has a mild, savoury flavour with warmth from black pepper and a hint of nutmeg. The texture is firm enough to slice cleanly, yet tender. Serve cold on dark rye with mustard, or warm briefly and pair with sauerkraut.
