What it is
Plain unflavoured gelatine powder — the classic kitchen gelling agent derived from collagen. Dissolve it in warm water and it sets cold liquids into smooth jellies, firm aspic (kholodets), panna cotta, cheesecakes, and glazes. One sachet typically sets 500 ml of liquid to a firm jelly; use less for a softer set.
