What it is
Salmon bellies are the fatty strip cut from the underside of the fish — prized for their high natural oil content, which makes them ideal for smoking. The fat draws the smoke deep into the flesh, producing a rich, silky texture and a pronounced but balanced smoky flavour.
Sold as a whole belly piece of approximately 300 g, ready to slice and serve on its own or alongside rye bread and pickles.
