About this product

Honey mushrooms — opyata in Russian — are small, firm forest mushrooms with caramel-coloured caps and a clean, slightly nutty flavour. Pickled whole, they keep all their bite, which is why they're a staple of the cold zakuska table from Riga to Vladivostok.

Drain, dress with a little sunflower oil, finely sliced onion and a turn of black pepper, and serve alongside cured fish, boiled potatoes, dark rye bread, or a glass of something cold and clear. They also bring depth to vinaigrette salads, mushroom-and-potato bakes, and forest-mushroom soups.
