What it is
Doktorskaya is one of the most recognised cooked sausages in Eastern European cuisine — mild, smooth, and delicately spiced. This version from RGK (Rēzekne Meat Factory, Latvia) uses beef as the primary meat, giving it a slightly firmer bite and a more pronounced, savoury taste compared to the traditional pork blend.
Ready to eat straight from the pack, it also shines pan-fried until lightly golden on both sides. Serve sliced on rye bread with mustard and gherkins, or alongside a soft cheese for a quick, satisfying snack.
