What it is
A whole-piece smoked pork delicacy from Nakotne, the Latvian smokehouse near Jelgava that has spent decades refining traditional curing techniques. Ancestral Meat is cut from quality pork brisket with the ribs removed, leaving an even, well-marbled slab. It is wet-brined, seasoned with a measured blend of spices, then hot-smoked over hardwood until the surface darkens to a glossy mahogany and the fat turns silky and translucent.
The result is a sliceable, ready-to-eat smoked meat with assertive smoke up front, clean pork sweetness behind it, and a clear note of black pepper and garlic on the finish. Serve cold and thin-sliced on rye, warm it briefly in a pan to crisp the edges for breakfast, or dice it into pea soup, sauerkraut, or potatoes baked in their skins.
