What it is
«Saimnieka gaļa» — Landlord's Meat — is a whole-cut pork specialty from Gaļas Pārstrādes Uzņēmums Nākotne, a long-running Jelgava-district meat house that was the first in Latvia to earn the national «Zaļā karotīte» (Green Spoon) mark for fresh pork. The cut is brined, gently cured, then hot-smoked over hardwood until the rind takes on a deep amber colour and the meat reaches a tender, sliceable texture.
The flavour is clean, savoury, and unmistakably Latvian: a soft layer of smoke, salt held back so the pork still tastes of pork, and just a whisper of dried herbs and spice. Serve it cold and thinly sliced on dark rye with mustard and pickles, warm through with boiled potatoes and sauerkraut, or dice it into pea soup, hodgepodge or scrambled eggs.
