What it is
Pure ground mustard seed — nothing added. Stir it with cold water and leave it ten minutes: the enzymes activate and build the sharp, sinus-clearing heat that hot water or vinegar would kill on contact. Used dry, it seasons cheese sauces, glazes for baked ham, pickling brines, vinaigrettes and rubs, and is the traditional base for a mustard plaster.
