What it is
Tkemali is the condiment that anchors the Georgian table. Made from sour plums slow-cooked with fresh coriander, garlic, and spices, it brings a sharp, herby lift to grilled meats, roasted vegetables, and crusty bread.
Mimino's yellow version is made from ripe golden mirabelle plums — softer in acidity than the green or red varieties, with a natural sweetness that makes it as comfortable beside a cheese plate as it is spooned over a lamb kebab. A classic choice for those new to tkemali.
