What it is
These are proper barrel cucumbers — fermented slowly in a salt brine with garlic, dill and spices, just as they have been made across Eastern Europe for generations. No vinegar shortcut: the tartness comes entirely from natural lactic acid fermentation, giving the cucumbers a complex, slightly sour flavour and that satisfying crunch. Ready to eat straight from the jar, served alongside hearty mains or cold cuts, or chopped into a pickle soup (rassolnik).
