What it is
Tkemali is the Georgian plum sauce that has accompanied grilled meats and roasted potatoes for centuries. This green spicy version is made from unripe mirabelle plums at their sharpest, bolstered with coriander, dill, garlic, and chilli. The result is a bright, punchy condiment with real depth.
Spoon generously over grilled lamb, roast chicken, or fried potatoes. Works equally well as a dipping sauce or stirred into a sharp vinaigrette.
