What it is
Adjika Imeruli is a classic condiment from the Imereti region in western Georgia. Where Abkhazian adjika is predominantly fiery, the Imeretian version is gentler and more aromatic: built on dried chilli, garlic, walnuts and fragrant herbs including coriander and khmeli-suneli. The walnuts give it a distinctive richness that works equally well as a marinade, a dipping paste or an aromatic addition to cooking.
Spread on lavash or rye bread; use as a marinade for chicken or pork; stir into vegetable dishes and broths; serve alongside grilled meats and fresh Georgian cheese (sulguni).
