What it is
Meat solyanka is one of the most beloved soups in the Eastern European kitchen. The broth draws character from a generous mix of smoked and cured meats, typically smoked sausage, ham, and frankfurter, slow-cooked with onion, tomato paste, pickled cucumber, and capers. A squeeze of lemon brightens the finish; a spoonful of sour cream rounds it out. Warming, deeply satisfying, and made fresh in-house at Babushka Deli.
