What it is
Traditional Baltic dark rye — dense, moist crumb made with rye sourdough fermented over many hours. Slightly sweet from long fermentation, firm crust with a clean tang.
Slice thinly under herring, smoked fish, hard cheese or pickles, with butter and tea. Toasts beautifully on the third day.
