What it is
The saldskabmaize — «sweet-and-sour» — style is one of the great Latvian breads. «Istena» is made traditionally: rye sourdough, scalded mash for the sweetness, slow ferment for the tang. Dark, slightly sticky-moist crumb, with a faint malty-caramel sweetness behind the sour.
Slice for cheese boards, smoked fish, or just eat with butter and salt. Toasts beautifully.
