What it is
The Iwuchka is a hot-smoked saveloy from Lackmann Fleisch- und Feinkostfabrik, a German producer specialising since 1998 in traditional Russian-style sausages made under German quality standards. Produced in Willstätt, Baden-Württemberg, each sausage is cured with salt and spices, then hot-smoked to develop a lightly caramelised skin and a moist, tender core.
Hot smoking sets this apart from dry-cured sausages: the Iwuchka reaches the table ready to eat, juicy rather than firm, with a clean, rounded smoke note. Slice cold onto rye bread, warm briefly in a pan, or serve alongside pickles and mustard.
