What it is
Kimchi is Korea's most iconic fermented dish — crisp Chinese cabbage and daikon radish coated in a paste of red chilli, garlic, ginger and salt, then left to ferment until it develops a deep, lively sourness. Rich in live lactic-acid bacteria, it brings a bright, fiery punch to rice bowls, noodles, grilled meats and wraps alike.
