What it is

A compact manual press tool designed to make traditional Georgian khinkali — the iconic pleated dumplings filled with spiced meat and broth. Getting those even folds right by hand takes practice; this device does it reliably, producing neatly shaped dumplings with consistent pleats every time. Suitable for home use as well as small-batch prep in a café or restaurant kitchen.

How to use

Roll the dough into a circle approximately 20 cm across. Place it on the device and add a spoonful of filling to the centre. Press the outer ring firmly — the petals close together, gathering the dough into even, classic folds. Pinch the gathered top firmly to seal the pouch so the broth stays inside during cooking. Release the ring and lift out your khinkali. Wash by hand after each session.
