What it is
Baltais Exporta kefir is one of those everyday Baltic dairy staples: cow’s milk fermented slowly with kefir grains and lactic cultures until it sets into a thick, drinkable yogurt-like product with the gentle effervescence and clean tang that proper kefir is supposed to have.
Pour it into a tall glass for breakfast, blend it with cucumber and dill for okroshka in summer, or use it as the liquid for pancakes and pellets where buttermilk would normally go. The 3,8–4,3% fat range gives it body without being heavy.
