What it is
Whole fish roe sacs salted and air-dried until firm and chewy. Intensely salty, deeply marine, the colour of dark amber. The classic beer snack of the Baltic and the Don.
Slice thinly off the sac with a sharp knife and eat with cold beer, dark rye and a slice of raw onion. A small portion goes a long way.
