What it is
Halva is what happens when finely ground sunflower seeds meet a hot caramel of sugar and glucose syrup. A natural emulsifier (soapwort root) gives it the layered, fibrous texture that crumbles between your fingers and slowly melts on the tongue.
The Eastern European version uses sunflower rather than sesame — earthier, less floral, more comforting. Eat a small piece with strong black tea or strong black coffee. Some people also crumble it over yoghurt or fresh curd cheese.
