What it is

The saldskabmaize style — sweet-and-sour Latvian rye. Rye sourdough plus a scalded mash gives the gentle malty sweetness behind the natural tang. Dark, slightly sticky-moist crumb, deeply flavoured.

Slice for cheese, herring, butter; toasts beautifully.
