What it is
These pan-fried dumplings take the classic Eastern European pelmeni and give them a satisfying golden crust. The thin wheat-flour pastry is folded around a seasoned meat filling, then pan-fried in butter until the exterior is crisp and lightly caramelised while the filling stays succulent and full of flavour.
Served hot, straight from the pan. Best accompanied by sour cream (smetana) or a sharp mustard. A side of pickled cucumber or fresh dill rounds out the plate.
Ingredients
Dough: wheat flour, water, eggs, salt. Filling: minced pork and beef, onion, garlic, black pepper, salt. For frying: vegetable oil or butter.
