What it is
Dried salted bream (Abramis brama) is one of the most recognisable snacks in Eastern European food culture. Fresh bream is gutted, rubbed generously with salt, and left to cure before being hung and slow-dried in cool, circulating air. The result is a firm, intensely savoury fish with concentrated natural flavour — nothing added, nothing taken away.
Tear into strips and serve as a snack alongside cold beer or kvass. Works equally well on a sharing board with rye bread, pickles, and mustard. Peel the skin back and pick the flesh from the bones — both sides of the fillet yield clean, meaty pieces.
The flesh is dense and slightly chewy with a deep, clean fish flavour. The salt draws out moisture during drying, leaving a compact fillet that peels apart in thin, almost papery strips. The skin crisps pleasantly and the belly fat, when present, adds richness.
