What it is
Doshirak is the noodle that defined a generation of Russian quick lunches, and the seafood version is the one regulars reach for when they want something brighter than the classic beef. The tray format — slimmer than a mug, sturdier than a cup — sits neatly on a desk and comes with its own plastic fork tucked under the lid.
Pour boiling water to the marked line, seal the lid, and wait three minutes. The broth comes alive with squid, shrimp and mussel notes, lifted by laminaria flakes and a quiet flush of red pepper. Springy wheat noodles, soft carrot, soy texture and a piece of kamaboko round it out.
