What it is
A traditional Lithuanian charcuterie: whole pork tongues are trimmed, slow-simmered until tender, layered tightly and bound into a compact loaf. As it cools the natural collagen sets, so the roll holds together and slices cleanly into thin, glossy rounds. The flavour is mild and meaty with a soft, almost creamy texture, lightly seasoned with white pepper, nutmeg and bay. Serve cold on rye with mustard, fold into a charcuterie board, or pair with pickles and a hunk of dark bread for a proper Baltic supper.
