What it is
Capelin (Mallotus villosus) is a small, oily fish from the cold waters of the North Atlantic — close cousin to smelt, prized in Baltic and Eastern European cuisines for its rich flavour and delicate texture. These whole fish are dry-salted, then cold-smoked at low temperature to preserve the natural oils and give each fish a characteristic golden skin and gentle smoky depth.
Ready to eat straight from the pack. Serve whole alongside rye bread and a cold beer, or flake the flesh off the bone as a topping for open sandwiches.
