What it is
Branză de burduf — the iconic Romanian sheep’s milk cheese, salty and pungent, traditionally ripened in fir-tree bark or sheepskin which lends a faint resinous note. White, crumbly, intensely savoury.
Crumble over hot polenta (mămăligă), fold into scrambled eggs, layer into bureks, or eat with cured pork and pickled peppers.
Ingredients
Pasteurised sheep’s milk, salt, microbial rennet, starter cultures. Ripened in pine bark.
