What it is
Chechil (чечил) — Armenian brined string cheese pulled into long fibres and plaited into a braid, then cold-smoked. Amber on the outside, salty and chewy inside, pulls apart in strands like nothing else.
Tear off ribbons at the table with cold beer, lay across a charcuterie board, or chop into salads with tomatoes and walnuts.
