What it is
Tushenka is the cornerstone of the Russian and Soviet pantry — generous chunks of pork slow-cooked and sealed in the tin in their own rendered juices. Open the can and you find firm, fork-tender pieces sitting in a layer of golden gelatine that melts the moment it meets a warm pan. The seasoning is plain and honest: salt, a few peppercorns, a bay leaf. Nothing is hurried, and nothing is hidden.
This is food with a working life behind it. For generations it has travelled with hunters, fishermen, train passengers and dacha gardeners — opened cold straight onto a slice of black bread, or tipped into a pot of buckwheat, potatoes or cabbage to turn a humble side into a full supper. Heat it through and stir in fried onion for a fast skillet supper; spoon it into mashed potato for a rib-sticking lunch; add to borscht or shchi for body and depth at the end of cooking.
