What it is
RGK tushenka is the classic Soviet-era pantry staple, made the way Latvian meat factories have done it for decades: generous chunks of beef are seasoned with little more than salt, bay and black pepper, then sealed in a 250 g tin and slowly cooked under pressure until the meat is tender enough to break with a spoon and the natural juices set into a glossy, savoury jelly.
Open the tin, warm it gently and you have an instant meal: spoon it over hot buckwheat, mashed potatoes, pasta or boiled rice; fold it through fried onions and cabbage for a hearty bigos-style supper; or stir it into vegetable soup at the last minute for a deep, beefy lift. It is the original camping, cottage and emergency-cupboard food, ready to eat straight from the tin if you are in a hurry.
Ingredients
Beef (min. 60%), beef fat, water, salt, bay leaf, ground black pepper. No artificial preservatives — the tin and the cook do all the work.
