What it is
RGK canned stewed pork — the Latvian take on tushenka, that cornerstone tin of every Eastern-European pantry from the dacha shelf to the climber's rucksack. Coarse chunks of pork are seasoned with salt, bay leaf and a turn of black pepper, packed into the tin and slow-cooked under pressure until the meat falls apart at the touch of a fork and a layer of pale, savoury fat sets on top.
It is fully cooked and ready to eat. Spoon the contents into a hot pan and warm through for an instant supper with fried potatoes and onion; stir into buckwheat, pearl barley or pasta; pile onto thick rye bread with a pickled cucumber; or carry the tin into the woods and crack it open over the campfire. Honest, fuss-free meat with a long shelf life.
