What it is
Borsch is one of the most beloved dishes of Eastern European cuisine, and ours is made the traditional way. A rich beef broth forms the base, slow-simmered to draw out full flavour. Grated beetroot gives the soup its deep ruby colour and gentle earthy sweetness, while shredded cabbage, potatoes, carrots and onion add body and substance. Finished with tomato paste, bay leaf and fresh dill, it arrives as a complete and satisfying meal in a bowl.
Heat gently on the hob for 5–7 minutes until piping hot throughout. Serve with a spoonful of sour cream (smetana) stirred in at the table, and a thick slice of rye bread on the side. A pinch of chopped fresh dill on top is the traditional finish.
