What it is
Juodasis Kumpis literally means “Black Ham” in Lithuanian — a name that points straight at its dramatic dark-mahogany exterior. This is one of Biovela’s flagship cold-smoked products: a whole, mature pork ham (around 96% pork) that is dry-cured, rested, and then slowly cold-smoked over hardwood for many hours until the rind takes on its characteristic near-black colour and the meat firms into a dense, sliceable muscle.
Cut thin, it opens into a deep rosy-red interior with neat veins of natural fat, and the flavour is concentrated, savoury and gently smoky — richer and more assertive than a soft pink boiled ham. It is a true Baltic delicatessen piece: lay it on dark rye with butter and horseradish, build it into a zakuski platter with pickles and sharp cheese, or chop it small into a bowl of cold beetroot soup. It also adds remarkable depth to a slow-cooked bean stew, a creamy potato bake, or a simple breakfast omelette.
