What it is
This is classic Russian-style canned beef stew, known as tushenka, in the familiar 400g tin. Inside you will find substantial pieces of beef, slowly braised in their own juices with salt, bay leaf and black pepper. Open the lid and you see the traditional cap of pale tallow on top; underneath sits dense, fibrous meat that flakes apart with a fork and releases a rich, savoury gravy the moment it hits the pan.
It is the road-trip, dacha and camping pantry classic. Warm it through in a skillet with fried onions and serve over boiled potatoes, buckwheat or pasta navy-style. Stir a few spoons into borscht or shchi in the last minutes of cooking, roll it into thin pancakes, or pile it onto dark rye bread with mustard and a pickled cucumber. Hot, filling, and very much the taste of a Soviet-era kitchen on a cold evening.
