What it is
This is premium braised beef in the East-European tushenka tradition, pushed to a deli-grade specification: a striking 95% of the tin is actual beef, leaving only a whisper of beef fat, water and seasoning around it. Generous, hand-cut chunks of meat are seasoned with salt, bay leaf and a turn of black pepper, sealed in a 525g family-size tin and slow-cooked under pressure until the muscle fibres are spoon-tender and the natural juices set into a glossy, savoury aspic.
It is fully cooked and ready to eat straight from the tin, but it really comes into its own warmed through: spoon it over hot buckwheat, mashed or jacket potatoes, pasta or rice; stir the meat and a ladle of its own jelly into vegetable, cabbage or borscht-style soup for a deep, instant beefy lift; or pile it onto thick rye bread with mustard and a pickled cucumber. One tin feeds two to three generous portions, making it a proper pantry workhorse for the dacha, the cottage and the emergency cupboard.
