What it is
Yachka — coarsely cut whole barley grain, the unpolished cousin of pearl barley. Where pearl barley (perlovka) is buffed smooth and used in soups and pilafs, yachnevaya is left rough-edged and makes a thicker, more rustic porridge — the classic Russian yachnevaya kasha with a knob of butter.
Uvelka splits the work for you: each box holds five 80 g portions sealed in food-grade boil-in-bag pouches, so timing and proportions are taken care of. The brand is the long-running Chelyabinsk-region grain house — pale-yellow bag, dependable quality, fixture in Russian and Eastern European pantries.
How to cook
Bring a large pot of salted water to a rolling boil — at least 1 litre per bag. Drop in 1 or 2 bags (each is one generous portion), and simmer uncovered for 20 minutes. Lift each bag out by the paper tab, snip the corner with scissors, and tip the cooked grain into a bowl. Stir in butter, season with salt and pepper, and finish with fried mushrooms and onion, a slow-cooked stew, or whatever you would normally pour over rice.
