What it is
Пшеничная крупа — cracked durum wheat — is one of the oldest grains in Russian and Ukrainian kitchens, the everyday cousin of bulgur (similar grain, just not parboiled before drying). Cooks into a thick, golden porridge or holds its shape as a side, with a mild wheat flavour that goes equally well with butter, mushrooms, meat or a glug of milk and a spoonful of sugar.
Packed by Uvelka, the long-running Chelyabinsk-region grain house, in five food-grade boil-in-bag pouches. Each bag is one generous portion: drop into salted boiling water, walk away, lift out when done.
How to cook
Bring a large pot of salted water to a rolling boil — at least 1 litre per bag. Drop in 1 or 2 bags and simmer uncovered for about 20 minutes, until the grain is tender. Lift each bag out by the paper tab, snip the corner with scissors, and tip the cooked groats into a bowl. Stir in butter and salt for a savoury side; warm with milk, butter and sugar for the classic Russian breakfast porridge.
