What it is

Classic Russian перловка — polished whole barley grain, the slow-cooking, fibre-rich kernel that gives the proper chew to a rassolnik pickled-cucumber soup, the bones of a hearty barley pilaf, or a thick warming porridge with butter. This is whole pearl barley, not yachka (the cracked barley grits in the same brand line) — bigger grain, longer cook, more body.

Packed by Uvelka in five food-grade boil-in-bag pouches, each one a generous single portion. Long-running Chelyabinsk-region grain house — the bag format makes the slow cook easier: drop in, walk away, lift out when done.

How to cook

Bring a large pot of salted water to a rolling boil — at least 1.5 litres per bag. Drop in 1 bag and simmer uncovered for about 40–45 minutes, until the grain is tender but still has a little bite. Lift out by the paper tab, snip the corner with scissors, and tip the cooked barley straight into your soup pot or a bowl with a knob of butter. To shorten the cook, soak the bag in cold water for 1–2 hours first.
