What it is
Baklazhannaya Ikra — literally “aubergine caviar” — is one of the most beloved preserved vegetable spreads across Russia, Ukraine, and the wider post-Soviet world. Todorka’s version follows the classic recipe: roasted or stewed aubergine blended with tomatoes, onions, carrots, and a touch of oil, then slow-cooked to a thick, spreadable paste. Savoury, lightly smoky, and mildly sweet from the vegetables, it works equally well on bread, as a side dish, or stirred through pasta or rice.
