What it is
Baklazhannaya ikra — aubergine caviar — is one of the most enduring dishes of Soviet-era preserving. Roasted aubergine forms the backbone: charred, softened, and blended with tomatoes, onions, peppers and oil into a thick, deeply savoury spread. Eat it cold on dark rye, spooned alongside grilled meat, or warm as a simple side.
