What it is
Mates herring — known across Baltic and Eastern European tables as matje — is made from young Atlantic herring caught before the fish have built up their full fat reserves. Cured gently in a mild salt brine with acidity regulators, the fillets develop a delicate, slightly tangy flavour with none of the sharpness of heavily salted herring.
Zigmas, a well-regarded Lithuanian fish processor, packs the skinless fillets in refined rapeseed oil to keep them moist and tender right up to the moment you open the jar. Serve with rye bread and onion rings, fold into salads, or use as a topping for open sandwiches.
