What it is

Cornel (cornelian cherry, Cornus mas) is one of the oldest cultivated fruits of the South Caucasus — small, bright-red drupes with an intensely sour-sweet flavour and a generous hit of vitamin C. YAN slow-cooks them with sugar to produce a thick, jewel-toned jam where the fruit holds its shape and the syrup carries all the berry's natural tartness. The result is neither cloyingly sweet nor one-dimensionally sour — it sits at the point where preserve meets compote.

Spread on thick-sliced bread, spooned over natural yoghurt, or served alongside hard cheese — cornel jam is a Caucasian pantry staple that earns its place at any table.
