What it is
Parboiling subjects whole-grain rice to steam pressure before milling, pushing vitamins and minerals from the bran into the grain. The result is a golden-hued long-grain rice that cooks evenly, keeps each grain separate, and holds its texture without going mushy. Works well as a side dish, in pilafs, rice salads, and stuffed peppers.
