What it is
Tula gingerbread is Russia's most celebrated pryanik, baked in the city of Tula since the seventeenth century and stamped with a carved wooden board that leaves its signature raised pattern. This one comes from the Yasnaya Polyana confectionery factory, named after Tolstoy's estate just outside the city. Soft honey dough encloses a bright apple-fruit filling, finished with a thin sugar glaze. Small enough for a lunchbox, generous enough to cut into wedges alongside a pot of tea.
