Tortoff «Legend of Kyiv» Cake with Hazelnuts 850g

What it is

This is Kyiv’s most famous cake, in the hazelnut version. Baked nut-meringue layers are set with a soft buttercream, and the whole round is finished with chocolate cream piped in the chestnut-leaf pattern that has been the cake’s signature since Soviet-era Kyiv — the chestnut being the city’s emblem. The texture is the point: the layers stay crisp against the cream rather than going soft, and roasted hazelnuts run right through them.

It arrives frozen in its printed round box and needs a slow thaw in the fridge before serving — give it several hours, or overnight, then let it stand a little while at room temperature so the buttercream loosens. An 850 g round cuts comfortably into ten or twelve slices. Serve with black coffee or unsweetened tea; it is a sweet cake and does not need help.

Sugar, butter (cream butter), egg white, roasted crushed hazelnut kernels 11.7%, premium wheat flour, whole condensed milk with sugar (whole cow’s milk, sugar (not less than 43.5%), milk sugar (lactose)), powdered sugar, low-fat cocoa powder (10–12%), brandy (3-year aged wine distillate, drinking water, sugar syrup, colouring plain caramel (E150a)), gelling agent gelatine, dessert wine, vanilla essence (rectified ethyl alcohol, drinking water, flavouring vanillin (vanillin, ethyl vanillin)), preservative sorbic acid (E200), acidity regulator citric acid (E330); natural food colourings: carmine (water, solvent propylene glycol (E1520), colouring carmine (E120)), turmeric (emulsifier polysorbate 80 (E433), solvent propylene glycol (E1520), colouring curcumin (E100), drinking water); flavouring orange, synthetic food colouring brilliant blue FCF (E133).

Contains: nuts (hazelnut), cereals containing gluten (wheat), milk and egg. The distributor also notes it may contain traces of peanuts and other nuts.

Contains alcohol — brandy, dessert wine and vanilla essence are all part of the recipe. Contains gelatine, and the colour carmine (E120) is of insect origin, so this cake is not suitable for vegetarians or vegans.

Keep frozen at −18 °C. Do not refreeze once thawed. Thaw in the fridge for several hours or overnight, then serve. Once thawed, keep chilled and eat within 24–48 hours.
