About this product
Gruzdy (Lactarius resimus) are the white milk mushrooms with a deep place in Russian cuisine — funnel-shaped caps, dense crunchy flesh, and a clean briny flavour unique to them. Salt-curing in barrels (now jars) is the old way and remains the best way; vinegar would destroy what makes them special.
Drain, dress generously with cold-pressed sunflower oil, fresh dill and slivers of red or sweet onion. Serve with boiled potatoes, dark rye and a glass of something cold — this is the headline mushroom of the proper Russian zakuska table. Also superb folded through sour cream as a quick salad.
